COOK-UP RICE (Guyanese) (Peas & Rice)

Cook-up Rice (Guyanese)
(Black-eye peas & rice)
Ingredients:
½ lb. salt beef (soaked overnight) and/or pig tail (chopped)
2 cups rice (long grain - par-boiled)
2 blades chives (chopped)
1 tsp. lime juice
3-4 garden tomatoes (sliced)
Salt (to taste)
½ cup dried black-eyed peas (soaked beforehand)
Spring of thyme
Sprig of marjoram (chopped)
1 small hot pepper (chopped)
4 cups water
1 (14 oz.) tin of coconut milk or ½ pack of creamed coconut.
1 onion (chopped)
½ green pepper (chopped)
2 tbsp. oil

Instructions:
Brown meat in oil, then add onions, pepper and chives. Cook for a few minutes then add water, coconut milk, salt and peas; cook for about 20 minutes. Add rice, lime juice, tomatoes, thyme and marjoram, stir. Reduce heat and cover. Stir occasionally and cook until rice and peas are soft but grainy.
