1 lb. stewing beef
Salt & pepper (to taste)
2 tbsp. oil
1 oz. curry powder
1 onion (chopped)
2 garlic cloves (chopped)
½ lb. boiled potatoes (quartered) *(use potato
water for stock)
Instructions:
Wash meat and cut into medium pieces and season with salt and pepper. Mix curry powder with a little warm water to make a
paste. Fry onion, garlic and curry paste lightly, then add meat and fry. Add water
stock (from potatoes) and bring to a boil. Reduce heat and simmer until meat is
tender and gravy has a semi thick consistency, then add potatoes. Serve over white rice or with Roti.
